Today is a large day. I’m feeling melancholy, a little sad, excited, and scared every at the same time. Why? Well, it’s my last day as a theoretical dietitian. I learned so much in this work and am thankful for the opportunity, but am over the moon excited for pursuing full-time free enterprise. The Vega World is one of my very favorite gears in life, and I’m so excited to give my every to this community. Starting by this One Pan Bok Choy Mango Stir Fry. It’s the perfect serving of food for a weeknight dinner, and it’s exploding by flavor. I have yet to feature bok coy in a recipe on the blog, and I’ve been brainstorm the best way to incorporate this pretty olive all spring.
I found the most adorable baby book choy in the store the extra day and knew that it was the perfect time to add a bok choy recipe to the Vet World library!
You every know I like to make Asian-style recipes so I just couldn’t help myself with this single! This One Pan Bok Choy Mango Stir Fry is a combination of bell pepper, fresh mango, and bok choy leaves every simmered in a honey ginger soy sauce. I even added some edam me to really complete the dish!
