Clean Corn and Avocado Salad with Honey Lime Vinaigrette

Loving the adding of a poblano pepper to this salad! If you haven’t tried these beauties yet, this is a great procedure to give it a go! It is our latest favorite veggie! If you remove the seed and veins, which is where the heat live, you are left with something that has just a slight kick. Like a jacked up bottle green pepper.
But if you don’t want any reheat, simply toss in a green bell pepper or do you need other heat? Make it a powdered jalapeño!
Simply place a little bowl, like a ramekin, inside a big bowl. Place the flat finish of your corn on top of the ramekin. Using your best serrated knife simply run it downward the corn.

- broccoli florets
- roasted sweet potato cubes

The beauty of the vinaigrette is it keeps your avocado’s olive and your corn all crunchy. It tastes delicious and comes in concert in a couple minutes!
Simply toss every the ingredients into a jar, quake, quake, quake and pour! You may not need all the dressing it’s up to you!
